When homemade | is so much better
We usually buy our pesto’s from the food store. I make sure that we always have basil pesto and tomato pesto at home. We use those in our
- weekly pasta dishes
- boiled potatoes
- any other dishes that require using sauces such as meatballs in red sauce etc
- on an open sandwich made with rye bread etc
One of our friends bought us an amazing present: Aero Kitchen Garden Kit. And that is simply an incubator for fresh herbs. We have fresh coriander, fresh thyme, fresh basil and fresh mint at home. However, basil grows like crazy!
So Soteris decided to turn basil into homemade pest. One of the best decisions ever!
This homemade basil pesto dressing is yummy, quick, aromatic and can be used in so many dishes to indulge them with its beautiful flavour.

Homemade Basil Pesto | Chefs At Heart

- STEP 1
2 cups of basil leaves or any other fresh herb such a coriander
1/3 cups of pine nuts or any other nuts such as almonds
3 garlic gloves, minced
- STEP 2
1/2 extra virgin olive oil – love Cretan Oils such as Ladinio from Kibsons
- STEP 3
1/4 teaspoon salt
1/2 cup parmesan cheese
Directions
- STEP 0: Gather all ingredients and all utensils | 2 mins
- STEP 1: Blend basil with pine nuts and garlic | 3 mins
Put in a blender and pulse until nice and smooth. Scrape with a spatula the sides, if needed. - STEP 2: Add the oil | 3 mins
Add in steps the oil ie if you are using a food processor, add bit by bit while the processor is running. That will ensure that with help the sauce blend well and will prevent the oil from separating. - STEP 3: Add the last remaining ingredients | 1 min
Stir in the salt and the parmesan cheese. Done! - STEP 4: Store in an airtight container in the fridge
Notes
- You don’t have basil? use other fragrant herbs such as fresh coriander
- You don’t have pine nuts? use other nuts such as almonds or walnuts
- You don’t have parmesan? its ok to skip it
