This dish is yummy, quick, cheap, low in calories, rich in fibers and can be eaten as a breakfast, as a lunch or as a dinner…
Is this the perfect dish? It definitely qualifies for that! Rye bread and toppings is officially the equivalent of Coco’s “little black dress” for us. It’s our new definition of classic dish i.e. a dish that can be suitable whatever the season is, whatever the time of the day is, whatever the ingredients that we have are, due to it’s diverse behavior: it can be combined with 2-3 ingredients or more and make something wonderful and so easy and healthy to make.
The main players of this version of the recipe are of an oriental nature
- Rye Bread, which is full of fiber and linked to several health benefits such as improved heart and digestive health
- Avocado, which a creamy and nutrient dense choice; has 20 vitamins and minerals
- Poached Eggs, which are loaded with deliciousness and gooey but still running yolk
- Pickled ginger, which is full of aroma and exclusive sophisticated flavor
- Cucumber, which is full of freshness

Ingredients
- Step 1: Poach The Eggs
1 or 2 organic eggs – used 2
- Step 2: Prepare The Remaining Items
1/2 avocado in sliced or mashed – used HASS avocado
peeled & shredded cucumber
- Step 3: Assemble Everything Together
1 slice of rye bread – used Delba Whole Grain Sunflower Seed Bread
Philadelphia Cheese – used the light version
1 or 2 slices of turkey ham – i love the smoked version of the one sold in the Carrefour Delicatessen section
some pickled ginger – used the Monty & Totco
1 TBS of sesame
1 TBS of Teriyaki sauce – used Kikkoman
some fresh mint

1 chopping board
1 good kitchen knife
1 or 2 small bowls with water
a microwave
1 vegetable peeler for the cucumber
1 or 2 pieces of strong kitchen towel

Directions
- Step 0: Prepare Firstly
Gather all the ingredients and the utensils. - Step 1: Poach The Egg (s)
The most efficient and effortless way to poach an egg or two is in the microwave.
Refer to How to poach an egg in 3 mins. - Step 3: Prepare The Remaining Items
– Cut the 1/2 avocado in slices or mash it with a fork
– Peel the cucumber and trim it in thin horizontal pieces ie strings - Step 4: Assemble Everything Together
– Spread the Philadelphia Cheese on the Rye Bread
– Add 2 slices of turkey ham for the non vegan option
– Add the sliced or mashed avocado
– Add the cucumber
– Add the sesame, pickled ginger with a splash of teriyaki and some fresh mint
– Add the poached egg(s) on top or on the side - Step 5: Enjoy!
Enjoy with some gingery Kombucha or a nice sparkling water and some lemon.

- You don’t have a rye bread? Use a tortilla, a pitta bread or a nice sourdough slice or a ryvita or even no bread at all
- You don’t have Philadelphia Cheese? Use some Greek yogurt
- You don’t have fresh mint? Use some fresh coriander

2 boiled eggs, sliced in two – prebaked at an earlier stage
10 ml of green curry sauce leftover
1 tablespoon of roasted Almonds

Technical Tips
• Rye Bread contains low fat and high in fiber, thus making it ideal for those pursuing a wholesome and fiber-rich snack. I use the Delba Rye Bread that can come in different versions i.e. with pumpkin seeds etc. The pack contains 5 slices. I always have an unoppened pack in my fridge.
• Poached eggs are not fully cooked. However, most of the eggs sold are pasteurized to avoid the risk of food borne illnesses such as salmonella or avian flu. Pasteurized eggs are gently heated in their shells, just enough to kill the bacteria but not enough to actually cook the egg, making them safe to use in any recipe that calls for uncooked or partially cooked eggs.
