Ingredients

  • Step 1: Boil Water In The Kettle | 1< min And Then Add The Ravioli | 11 mins
  • around 1.5 liters of boiled water in a kettle

  • 2 packages of ravioli or tortellini, for this I used some Ravioli from Kibsons but most likely my favourite so far are the Goat’s Cheese & Spinach Tortellini from Carrefour

  • Step 2: Prepare The Sauce In Parallel | 3 mins
  • 250 ml of plant based cream, used Alpro Soya

  • 2 teaspoons of ready made Basil pesto, used Sacla

  • 1/2 a lemon juice

  • 1/4 cup of ground almonds

Directions

  • Step 0: Gather All Ingredients & Utensils
    While boiling the water in the kettle
  • Step 1: Boil Water In The Kettle | 1< min And Then Add The Ravioli | 11 mins
  • Step 2: Prepare The Sauce In Parallel | 3 mins
    In a small pan mix the cream with 2 tsp of basil pesto or tomato pesto, with 1/2 a lemon juice and 1/4 cup of ground almonds.
  • Step 4: Enjoy!

Notes

  • You don’t have pesto? blend some fresh herbs such as coriander or parsley with some garlic and some olive oil
  • You don’t have cream? make a home made white sauce/béchamel sauce – search for the recipe
