A waffle that feels and tastes like a fluffy and fragrant cake
These Delicious Non Conventional Waffles are yummy, quick, fragrant and resemble a cake. They are
- crispy and golden on the outside
- and fluffy and fragrant on the inside
- and beautifully fragrant.
They qualify for premade freezer food, so they can be stored into the freezer i.e. individually in small food bags, and you can have a waffle in less than 3 mins the next time you are craving some breakfast or dessert. Some people do combine waffles with meat i.e. chicken on a waffle, so even than could be quicker if you wish to go for that combination.

- lasts up to 3 months in the freezer
- can be a snack or a dessert or part of the main meal
- and an instant shot cake but a touch better as far as the calories and carbs are concerned, if you only eat 1 or 2 waffles

- Step 1: Mix Dry Ingredients
1 cup spelt flour – used Organic Larder Whole Grain Spelt Flour
1/2 cup almond flour – used Bob’s Red Mill Super Fine Almond Flour
1/2 cup coconut flour – used Earth’s Finest Organic Coconut Flour
1/2 cup caster sugar – used cane sugar – alternative sugars can be used
1/4 – 1/2 cup desiccated coconut
1 grated carrot
2 teaspoons flaxseed – used CANMAR Milled Golden Roasted Flaxseed
1 teaspoon of cinnamon
1 teaspoon of Baking Powder
a pinch of salt
- Step 2: Mix Eggs & Liquids
2 eggs
3/4 cup milk – used Aplro Soya Milk
up to 25 gr of butter – unsalted or salted will do – used Beurre D’Isigny
1 teaspoon of vanilla essence or a sachet of vanilla sugar

– a large bowl
– a medium bowl

Preheat the waffle maker – use Tefal TEF SW852D Snack-Grill 12 in 1 - Step 1: Mix Dry Ingredients | 1 min <
In a large bowl, put the dry ingredients and mix it well - Step 2: Mix Eggs & Liquids | 1 min <
Melt the butter for about 30 s in the microwave
Then, in a medium bowl, mix the eggs and the milk and the melted butter. - Step 3: Mix Step 1 + Step 2 | 1 min < + ~3 min each
Fold the mixture prepared in Step 2 into the one in Step 3
Once the batter is formed, pour your batter into the hot waffle machine/iron and cook according to your manufacturer’s instructions ~ 3 to 5 mins
– Our waffle maker is non stick, therefore no pre-greasing is required. If you have one that is not, use oil/butter/spray before adding the batter.
– When waffles are being cooked, they release some steam. Use this as an indicator of the progress: Wait for the steam to stop, before checking if the waffle is ready.
– Remove the waffles using a wooden tweezer - Step 4: Enjoy!
As a snack or a dessert or main dish.
Serve with fruits such as berries and dry mangoes along with a cream made of 1 blended banana with some cocoa nibs.
Or simply the classical toppings such as Nutella with banana and maple syrup or Greek yogurt with berries and honey etc.
Can be stored for a day or 2 in the fridge or in a food bag into the freezer for up to 3 months.
Notes
- You don’t have eggs or you want it egg free? Replace 2 eggs with 1 mashed banana
- You don’t have/want to use butter? Replace the same quantity with vegetable or olive oil
- You don’t have milk? Use Greek yogurt in the same quantity
