These Creamy Pasta With Mushrooms And Herbs are yummy, quick, light in calories, light in flavour, rich in protein and can be eaten for lunch or for dinner.
We love pasta in our household. We tend to cook a pasta dish at least once per week. We tend to joke that Faye is probably Italian somehow as pasta is the only dish that she always eats in whatever mood she is. And for that reason, we always have some pasta stored in our fridge for just in case Faye does not fancy another dish that we made or if not, it takes less than 15 min to make a pasta dish anyway. Pasta can remain fresh in your refrigerator for up to 5 days.
We usually eat pasta for lunch and avoid doing so for dinner time. Why? Check the technical details section below.

- Step 1: Boil Water & Cook Pasta
400 gr – 500 gr of pasta, used Tripolini from Carrefour which are baby friendly
1.5 L of boiled water in a kettle, quicker than waiting to become boiled when on the stove
- Step 2: Prepare The Sauce
250 ml of cream, used Cream Alternative of Alpro Soya
125 gr White Mushrooms
50 gr of Almond Flour
40 gr grated Cheddar Cheese
25 gr of frozen sweet corn
1 tablespoon of Olive Oil, used Ladinio Cretan Olive Oil from Kibsons
2 tablespoons of Basil Pesto, used Sacla
1 brown onion, chopped/diced
1 glove of garlic, chopped/diced
some fresh coriander
some Everyday Spices, from Spinneys
some Nutmeg
Directions
- UTENSILS
- Step 1: Boil Water & Cook Pasta | < 12 mins
Boil around 1.5 liters of water in your kettle
Add this to a casserole in medium to high heat
Then add the pasta with a splash of olive oil
Cook for about 11 mins
Then drain them
Add a splash of oil when put back in the empty casserole - Step 2: Prepare The Sauce | < 12 mins *
Sauté the onion and the garlic
Then add the mushrooms, some corn
Then add plant based cream, herbs & spices, almond flour and some cheddar cheese
* to be done in parallel with Step 1 - Step 3: Mix Step 1 + Step 2 | < 1 min
Mix everything together
Wait for 1 min or so for the flavour to be absorbed from the pasta - Step 4: Enjoy!

Technical Details
- Pasta is high in carbohydrates, and for that reason it often takes the blame of being unhealthy. However, everything is relative they say. Carbohydrates are an important part of our nutrition: the are our body's main source of energy. According to NHS, muscles have limited carbohydrate stores, and need to be topped up regularly. A diet, that is low in carbs, can lead to a lack of energy during exercise, early fatigue and delayed recovery.

- keep your portion sizes right - usually the right amount of a portion if indicated by the size of your fist.
- pick healthy toppings such as home made sauces that have vegetables, healthy and good quality fats such as plant based fats and protein.
- pick whole grain pasta instead as they are higher in fiber and lower in calories and will make you feel fuller than the refined pasta.
- Carbs and pasta can be eaten at any time in the day. Do you know that there are cultures that they have noodles for breakfast? Or carbs are an essential element of the Mediterranean diet which everyone recognizes that is probably one of the healthiest and most balanced diets recommended? However, in our nutritional routine, we do tend to have pasta for lunch rather than for dinner. Why? Because eating pasta for lunch tends to be the biggest meal in our day. By doing that, we ensure that we keep our stomach fulfilled and can can have a lighter in calories meal at night. In that way, we have a greater potential to burn those carbs throughout the day until we go to bed whereas if it was for dinner that would be less likely. If we do not manage to burn the most, then those will be stored as fat.
