One of the all time classic Mediterranean recipes that got tweaked a bit and turned oriental, and tastes even better.

Ingredients

  • Step 1: For the meatballs sauce
  • 1 brown onion 🧅 diced

  • 1 slice of fresh ginger

  • 1 glove of garlic

  • a splash of dry white wine – used 1/2 a cup

  • a splash of light coconut milk

  • some fresh coriander

  • a splash of olive oil

  • a splash of soya sauce

  • some sesame seeds

  • Step 1: For the meatballs
  • 500 gr of minced turkey 🦃 meat

  • grate 1 carrot 🥕

  • add 1/2 – 1 cup of Arborio risotto rice

  • add 1/2 – 1 cup of breadcrumbs

  • add 1 egg – mix it firstly into a separate bowl and then add it

  • Step 3: Prepare the casserole items
  • put about 1.5 – 2 L boiled water from the kettle

  • add the remaining can of coconut 🥥 milk

  • add some mushrooms 🍄

  • add a stick of celery

  • 1 diced carrot

  • add 1 glass of dry white wine 🍷

  • add your spices – used BBQ spices from Spinneys, some nutmeg, some cinnamon, some turmeric <—- red chilled in the BBQ is a key flavour ingredient

  • add some lime leaves 🍃 <—- key flavour ingredient

Directions

  • Step 0: Gather All Ingredients & Utensils | 3 mins <
    You need a
    – casserole
    – stirring wood utensil
    – a chopping board
    – a good kitchen knife
    – a large bowl to mix all the ingredients
    – a grater
    – some food bags, if you are intending to store some in the freezer
  • Step 1: Prepare the mixture | 5 mins <
    Prepare the sauce & then mix it with most of the ingredients
  • Step 2: Let the mixture marinate | 30 mins+
    This step can be skipped
  • Step 3: Prepare the casserole items | 5 min <
    Put the necessary ingredients of this step into the casserole
  • Step 4: Mix all the steps together & boil | 30 mins+
    Boil for about 30 mins. Add some extra water if needed.
    Avoid too much stirring as that can break your meatballs.
  • Step 5: Enjoy!
    Enjoy instantly, or after a few days when refrigerated or after a few months when frozen.

Notes

  • Please be creative; i have used the above ingredients because this is what i had in my kitchen back in time
  • I made about 3 sets of meatballs x 12 meatballs each. Used one set for today’s meal and stored the other two sets in the freezer.
  • The others were converted into baked meatballs; one time with red sauce and the other one with white sauce.
