Try this version of Spiced Carrot Cake that is nutty, flavoursome and really easy to make. According to Wikipedia, many food historians believe carrot cake originated from such carrot puddings eaten by Europeans in the Middle Ages, when sugar and sweeteners were expensive and many people used carrots as a substitute for sugar.

Ingredients – FOR THE CAKE

  • Step 1: Mix Oil & Sugar Well | 5 mins
  • 300 ml sunflower oil

  • 100 gr demerara sugar

  • 125 gr golden sugar

  • Step 2: Add Eggs Into Step 1 | 2 mins
  • Add 3 eggs, 1 by 1 and mix well for another minute or 2

  • 30 – 60 ml of dark rum or brandy

  • Step 3: Add the dry ingredients to the mixture
  • 300 gr carrots. grated

  • 50 – 100 gr of walnuts or pecans or both chopped in small pieces – keep some for decoration

  • 1 tsp of cinnamon

  • 1/4 tsp of nutmeg

  • 1/4 tsp of ginger

  • 1 sachet of vanilla sugar

  • 300 gr of Al Bakers Patent Flour, sifted

  • 1 tsp of BP

  • 1 tsp of bicarbonate soda

Ingredients – FOR THE FROSTING

  • 500 gr mascarpone

  • 250 gr Philadelphia cheese

  • 100 gr whipped cream

  • 50 gr of icing sugar, sifted

  • 1 sachet of vanilla

  • some chopped walnuts and maybe some whole for the decoration
