One of the yummiest quilt free version of pancakes to make...

We are quite experimental in our kitchen. We have been cooking and baking for many years and we are at the stage that we are very comfortable in doing our own things, using the ingredients that we have in hand. I generally tend to follow the recipes as a guidance and do my own bits whereas Soteris is not, he is following those strictly.

This version of the pancakes is one that I made the other day for a weekend breakfast: Non Conventional Banana 🍌 Pancakes 🥞 with Oats & Almond Flour | Gluten Free Pancakes | Guilt Free Pancakes. We do tend to have a separation on what we do during the weekdays and what we do during the weekends. For example weekdays are more time constrained and need something quick and standard where are weekends can be more creative and can do things that need a touch longer.

These were accompanied with maple 🍁 syrup, coconut yogurt & blueberries on top. For Soteris I sprinkled his pancakes with some desiccated coconut 🥥.

In a large bowl, mix the eggs.
Then add the mashed bananas, the milk & the splash of oil.

Ingredients

  • Step 1: Mix Wet Ingredients
  • 2 bananas, mashed

  • 2 eggs

  • 1 cup of macadamia milk, or other plant based or traditional milk

  • a splash of olive oil or other oil or a teaspoon of coconut oil

  • Step 2: Mix Dry Ingredients
  • 1/2 a cup of oats, blended to almost a flour consistency

  • 1/2 a cup of almond flour

  • a splash of vanilla essence

  • 2 tablespoons of roasted almonds

  • 4 khalas dates, blended – can be soaked in warm water for a few minutes, if not too gooey

  • 1 teaspoon of Baking Powder

    – pancake maker or a pancake pan or a regular pan
    – a large bowl
    – a blender
    – a cup
    – a teaspoon
    – a tablespoon

    – a wooden tweezer
    – a big plate to deposit the pancakes
  • Step 0: Prepare Firstly | 1 min

    Preheat the pancake maker – I use Tefal TEF SW852D Snack-Grill 12 in 1
  • Step 1: Mix Eggs & Liquids | 1 min <
    In a large bowl, mix the eggs. Then add the mashed bananas, the milk & the splash of oil.
  • Step 2: Add Dry Ingredients | 1 min <
    Blend or cut in small pieces the dates. Add them in the mixture. Then add the remaining dry ingredients.
  • Step 3: Make the pancakes | ~4 min for each session
    Once the batter is formed, pour your batter into the hot pancake machine/iron and cook according to your manufacturer’s instructions ~ 3 to 5 mins. Or use a preheated pan to make 2-3 pancakes simultaneously.

    – Our pancake maker is non stick, therefore no pre-greasing is required. If you have one that is not, use oil/butter/spray before adding the batter.

    – When the pancakes are being cooked, they release some steam. Use this as an indicator of the progress: Wait for the steam to stop, before checking if the pancake is ready.

    – Remove the pancake using a wooden tweezer.
  • Step 4: Enjoy!
    As a snack or a dessert or main dish.

    Serve with fruits such as berries and a scoop of coconut yogurt or splash of pant based creme.
    Or simply use the classical toppings such as Nutella with banana and maple syrup or Greek yogurt with berries and honey etc.

    Can be stored for a day or 2 in the fridge or in a food bag into the freezer for up to 3 months.

Notes

  • You don’t have eggs or you want it egg free? its OK! Just don’t use as banana is considered as an egg replacement.
  • You don’t have milk? Use Greek yogurt or coconut yogurt in the same quantity.
