Ingredients

  • STEP 1: PREPARE FIRSTLY THE DOUGH
  • 5 cups of all purpose flour – used Al Baker Patent Flour

  • 1-1 1/2 cup of milk or orange juice – full fat is better

  • 1 cup of olive oil – or other vegetable oil

  • some ground mahlep – 1/2 teaspoon

  • some ground mastiha tears – 1/4 teaspoon

  • STEP 2: THEN PREPARE THE FILLING
  • 1 kg anari (Cypriot ricotta) or other type of ricotta cheese – salted & grinded

  • 250 gr halloumi, grinded

  • 250 gr dry anari, grinded

  • 4 eggs

  • 1 cup of raisins

  • some fresh mint, diced

  • some ground mahlep – 1/2 teaspoon

  • some ground mastiha tears – 1/4 teaspoon

  • some cinnamon – 1/2 teaspoon

  • some rosewater – 1/3 cup

  • STEP 3: BUILT THE FLAOUNA
  • 1/2 cup sesame seeds

  • 2 eggs
