A cake | that is vibrant like it’s origins

Try this version of Hummingbird cake that is creamy, nutty, flavoursome and really easy to make. The hummingbird cake, originated in the exotic Jamaica, and its flavours have the vibe and the intensity of the latter. This recipe is my modification/adaptation of the Hummingbird Bakery recipe for this cake.

The main players of these recipe are

  • Pineapples & Bananas, which are loaded with rich exotic flavours and numerous health benefits
  • Walnuts/Pecans, which are loaded with rich natural nutrients such as minerals and vitamins
  • Spices, such as cinnamon, ginger and nutmeg and of course vanilla
  • Rum, which is full of aroma and exclusive sophisticated flavour
  • Cream Cheese, used as a filling and frosting, which is balancing the exclusive sophisticated flavour of the cake

  • Step 1: Mix Oil & Sugar Well | 5 mins

  • Step 2: Add Eggs Into Step 1 | 2 mins

  • Step 3: Add the dry ingredients to the mixture | 2 mins

  • Step 4: Bake @ 175 C for 45 mins & Cool Down| 45 + 45 mins

  • Step 5: Prepare the frosting & apply it | 17 mins

  • Step 6: Enjoy!

Recipe | In Detail

Ingredients – FOR THE CAKE

  • Step 1: Mix Oil & Sugar Well | 5 mins
  • 300 ml sunflower oil

  • 100 gr demerara sugar

  • 125 gr golden sugar

  • Step 2: Add Eggs Into Step 1 | 2 mins
  • Add 3 eggs, 1 by 1 and mix well for another minute or 2

  • 30 – 60 ml of dark rum or coconut rum

  • Step 3: Add the dry ingredients to the mixture
  • 3 large peeled and mashed bananas

  • 1 small tin of pineapple, cut in pieces

  • 50 – 100 gr of walnuts or pecans or both chopped in small pieces – keep some for decoration

  • 1 tsp of cinnamon

  • 1/4 tsp of nutmeg

  • 1/4 tsp of ginger

  • 1 sachet of vanilla sugar

  • 300 gr of Al Bakers Patent Flour, sifted

  • 1 tsp of BP

  • 1 tsp of bicarbonate soda

Ingredients – FOR THE FROSTING

  • 500 gr mascarpone

  • 250 gr Philadelphia cheese

  • 100 gr whipped cream

  • 50 gr of icing sugar, sifted

  • 1 sachet of vanilla

  • some chopped walnuts and maybe some whole for the decoration
